What To Do With Left Overs From a Hog Roast

There are many things that you can do with the pork left over from your hog roast. The key to using the meat again is to get into the refrigerator within two hours. Meat left out longer than that should be discarded. Put the meat in a shallow bowl with a tight-fitting lid or wrap it in foil so that it retains moisture. When you do this, the meat is good to eat for up to three days. If you have more meat than you are going to eat in that time, then put it in the freezer where it will stay good for up to two months. Think about these ideas to use up the meat left over from a hog roast.

Main Course Mexican Rice

Mexican rice is a great way to use up leftover pork. Start by making your favourite Mexican rice recipe. About a minute before the rice is done, add cubed pork from your hog roast. Continue cooking the rice until the pork is warm. This fantastic main course is easy to prepare. Think about serving it along with some cooked red beans and fresh fruit. The great news is that this recipe takes only about 20 minutes to prepare making it great for a quick weekday dinner. If you have any of this left over, then you can re purpose it again inside tortillas.

Cuban Hot Sandwiches

Hot Cuban sandwiches are another great way to use up meat left over from your hog roast. Start by splitting a loaf of Italian bread not quite in two. Generously spread mayonnaise on one side of the bread and mustard on the other side. Place two slices of Swiss cheese on top of the condiments. Add your cooked pork in the middle. Slice a dill pickle in four thin strips adding the strips to your sandwich. Grill the sandwich in a hot skillet until golden brown.

Pork Stir Fry

Making a stir fry with the leftover hog roast meat is a delicious way to use it up. Creating a stir fry is also a great way to use up any leftover vegetables that you have on hand like leeks, baby spinach and yellow peppers. Add the pork and some vermicelli noodles. You have a meal ready in a snap.

There is no need to throw out that meat from your hog roast as long as it did not sit out for more than two hours. You can put in the refrigerator to use or freeze it. When you are ready, you can make Mexican rice, Cuban sandwiches and stir fry with it.
